Today's inspirational babe is Laura Mooney from @thehwycafe. This gal is not messing around! Just after she opened Hwy cafe with her partner Leo, she also found out she was pregnant! Starting a business is hard work, growing a tiny human is also hard work, try doing those 2 things at the same time! 🤯 Laura has been vegan for over 6 years and when the opportunity came up to open Pemberton's very first 100% plant based cafe and share their amazing cooking with the world they took it! Hwy is one of those vegan places you can take all your meat-loving friends to, and they probably won't even know it's not meat! Actually writing this right now is giving me some mad cravings for their buffalo chkn wrap! If you haven't checked it out yet you need to put it on your to-do list asap! Here's our chat with her 

1. Where’d you grow up and where do you live now?

I grew up in Oakville, Ontario, about 30 minutes outside of Toronto. I currently live in Pemberton with my partner, our two dogs and a cat!

2. What is your definition of strength?

Perseverance. Going through some sh*t and being a better person on the other side of it. And always being true to yourself.

3. What is something that’s important to you now that never used to be?

Self-love! Once I finally learned it was okay to love myself, my whole perception of life changed.

4. How would you describe your style?

50 Shade of Grey (the colour, not the book)

5. Favourite food to cook at home?

Anything with Noodles - pasta, Pad Thai, peanut noodles, the list goes on …

6. What’re 3 books on your bookshelf?

The China Study Game of Thrones (I will read it in one day), Zen and the Art of Happiness

7. What’s something you want to accomplish in the next year?

Continuing to grow the cafe and making vegan food accessible to more and more people each day! And learn how to play the ukulele.

8. Tell us something people would find surprising about you.

I have my degree in Social Work and have worked in community services for the past 6 years before opening the cafe. My partner and I hope to someday create a cooking workshop/mentorship program at the cafe to engage local youth to develop new skills who may not be able to otherwise.

9. Favourite movie?

Austin Powers Goldmember. Fun fact: when I was young I had really bad insomnia so I would watch Goldmember on my portable DVD player over again at night and I still have the entire movie memorized to this day. Honourable mentions: Remember the Titans, The Terminator and The Last Song when I need a good cry.

10. How do you want people to remember you?

As someone who was compassionate and kind to all beings.
